Beans to Bread: Flatbread & Pizza Crusts
• Create the Basic Recipe (or any variation previously mentioned) on the Dough cycle of your bread machine.
• Once it has completed its cycle, remove the dough from the pan and onto a lightly floured surface.
• Divide the dough into equal parts, depending on how large you want your flatbreads.
• Press it into shape with your hands if you’re comfortable doing that or roll it gently with a floured rolling pin to about ½ inch thick.
• To make a furrowed bread, press an oiled wooden dowel hard against the dough (lengthwise) at 1″ intervals. For a dimpled loaf, press the fingertips into the dough in a pattern.
• Preheat oven to 350.
• When the loaves have been shaped, assemble on greased baking sheets and let rest for 20 minutes.
• Place the loaves in the oven and bake until a light golden brown, about 25 minutes.

Pizza Crust
• Create the Basic Recipe (or any variation previously mentioned) on the Dough cycle of your bread machine.
• Once it has completed its cycle, remove the dough from the pan and onto a lightly floured surface.
• Divide the dough into equal parts, depending on how large you want your pizza. ½ of the dough will make a great 18 inch hand-tossed style pizza.
• Make the dough into a tight ball and then press it into shape with your hands, if you’re comfortable doing that, or roll it gently with a floured rolling pin to about ½ inch thick.
• Place it on your pizza pan and let it rest for about 30 minutes.
• Now you can either put the sauce and toppings on and bake it all at once in about 30 minutes depending on how much you like to load onto a pizza, or you can do what I do and bake the crusts in advance (20 minutes) and freeze them for quick, homemade pizza at a moment’s notice.
