Ezekiel Style Flatbread & Pizza Crusts

My family is crazy about pizza so creating an Ezekiel style pizza crust was a priority.  I’ve learned to make crusts (and Italian Cheese Bread) so comparable to Little Caesar’s that the kids don’t complain when they get the homemade version.  With it being a low-glycemic, high protein dough, my darling companion and I don’t have to wait for a “cheat day” to eat it either!

Flatbread

  • Ezekiel Style Flatbread & Pizza Crusts https://wp.me/paqxAL-264Create the Basic Ezekiel Bread Recipe (or any variation previously mentioned) on the Dough cycle of your bread machine.
  • Once it has completed its cycle, remove the dough from the pan and onto a lightly floured surface.
  • Divide the dough into equal parts, depending on how large you want your flatbreads.
  • Press it into shape with your hands if you’re comfortable doing that or roll it gently with a floured rolling pin to about ½ inch thick.
  • To make a furrowed bread, press an oiled wooden dowel hard against the dough (lengthwise) at 1″ intervals. For a dimpled loaf, press the fingertips into the dough in a pattern.
  • Preheat oven to 350.
  • When the loaves have been shaped, assemble on greased baking sheets and let rest for 20 minutes.
  • Place the loaves in the oven and bake until a light golden brown, about 25 minutes.

Pizza Crust

  • Create the Basic Ezekiel Bread Recipe (or any variation previously mentioned) on the Dough cycle of your bread machine.
  • Once it has completed its cycle, remove the dough from the pan and onto a lightly floured surface.
  • Divide the dough into equal parts, depending on how large you want your pizza. (½ of the dough will make a great 18 inch hand-tossed style pizza.)
  • Make the dough into a tight ball and then press it into shape with your hands, if you’re comfortable doing that, or roll it gently with a floured rolling pin to about ½ inch thick.
  • Place it on your pizza pan and let it rest for about 30 minutes.
  • Preheat oven to 350

Now you can either put the sauce and toppings on and bake it all at once in about 30 minutes depending on how much you like to load onto a pizza, or you can bake the crusts in advance (20 minutes) and freeze them for quick, homemade pizza at a moment’s notice.
